Aji Fantasy, Sparkly White

Aji Fantasy, Sparkly White (C. baccatum) is our own, and it came from luck as much as from work. Nearly two decades ago we were growing several hundred plants of yellow Aji Fantasy in the big greenhouses, and somewhere in that field one plant was doing something different: it was setting white pods. They turned out to be remarkable — genuinely delicious and with a freshness the yellow does not have. Everything sold under this name since has been selected out of that one mutation.

The flavour is what we kept it for. It is less sweet than the original Aji Fantasy and far fresher, with a clean, almost sparkling note behind it — which is exactly where the name came from. The flesh is thicker than the yellow, so the pods have real substance raw. And the Aji Fantasy structure is intact: sweet and gentle along the edges, with the heat sitting in the centre, so you decide with a knife how hot the dish becomes.

The plant is compact for a baccatum and gives amazing yields even in lower light — which is the other reason it earned its place here, in a country where light is the limiting factor for half the season.

A point of provenance: this chili also circulates under the name Aji Fantasy White — the same pepper, renamed by someone else. The line began here, with that one plant among the hundreds.

Superb stuffed, and excellent fresh in anything you would use a sweet pepper for.

Each pack contains approximately 8–10 or more seeds per variety.
