Delicious Aji from Peru. The aroma is very good, resembles Aji Amarillo (big version) but ripens more quickly and the pods are slightly smaller on this variety. The aroma works great with fish and chicken. When dried, the taste will have a very unique aroma which could be described as coffee-like. Medium hot. Limited supply.

Omnicolor
C. baccatum7A permanent favorite amongst chili pepper growers. As the name says, this compact and very well yielding plant produces pods that go through almost every possible color. They are rather hot. When dried and ground, produce extremely usable flakes or chili powder with unique flavor and tender heat suitable for dishes where you may not need the sharper flavor of “red peppers” or the characteristic “chinense pepper flavor”. This can add a totally new dimension to your cooking. Also, as baccatum peppers go, Omnicolor needs very little maintenance and does just well even indoors. Highly recommended for both, beginners and long-time chili pepper growers who have missed this great variety so far.

Lemon Drop
C. baccatum8Here’s another great classic – and an essential part of Peruvian cuisine! Baccatum peppers traditionally only grow in South America, but they are actually the easiest and most successful plants for home growers and beginners in chili hobby.

Lemon Drop represents hot, non-sweet, slightly lemon-flavored types of baccatum peppers (as opposed to sweet, low-heat or only moderately hot Ajis). The plant is relatively compact and produces lots of bright yellow fruit even in non-ideal home conditions.
Grows well in pots. Lemon Drop is especially great for fish dishes! Also a very good, different tasting alternative to Cayenne and other Asian-type red hot peppers.
